Cinco de Mayo en la casa! (Part 1)

Here is a few dishes I cooked for my family to celebrate Cinco de Mayo. If you love Mexican food you will love my easy, quick and delicious recipes.



Corn Elote

4 Ears of Sweet Corn

1/3 C of Mayonnaise

1/3 C of Sour Cream

1 Clove of Garlic

1/2 tsp of Paprika (I used smoked)

1/2 tsp of Chili Powder

1/4 C Chopped Cilantro

1/2 C Cotija Cheese

Zest of 1 Lime

Lime Wedges


Method of Preparation

1. In a small bowl whisk mayonnaise, sour cream, garlic,lime zest, 1/4 tsp of chili powder and paprika, and half of the 1/4 c of cilantro.

2. Heat your grill and brush the shucked corn w/oil and grill. Grill until corn is softened and a little charred.

3. Take Corn off the grill and brush w/your cream mixture.

4. Sprinkle w/cotija cheese, and the remaining chili, paprika, and chopped cilantro.
