Mexican Pizza...
This simple yet extremely light and delicious pizza recipe is a family favorite. This Brixx inspired pizza is my version of their Mexican Pizza. Not in the mood for tacos today?? Why not make a pizza...

Method of Preparation
The Pizza Dough
1 Envelope of dry yeast (1/4oz)
1/4c of warm water
3/4c of room temp water
2 tbls of Olive Oil
1 tbls of Honey
1 1/2 tsp Kosher Salt
3 c of All Purp Flour + a little extra for kneading
The Pizza Toppings
1 can of Refried Beans (black/traditional)
1-8oz block of Mozzarella Cheese - Shred or you can purchase already shredded- melts better if freshly shredded
2 Roma Tomatoes- Slice
2 Jalapenos -Slice
1 or 2 Cooked Chicken Breast (Season with Salt & Pepper and bake or grill off until reach internal temp of 165 degrees.
8 oz Sour Cream
1 bunch of Cilantro for Garnish
Method Of Preparation
1. Dissolve yeast in warm water for 10 min
2. In a small bowl mix the next 4 ingredients together.
3. In a stand mixer with a hook put 3 cups of flour in the mixing bowl. Slowly add the honey mixture until flour is coated with liquid. (About 10-20 seconds) Then add your yeast mixture until dough is formed into a ball. (Another 10-20 seconds) Mixing on low speed. If dough is too sticky add more flour. Mix dough on low speed for about 5 minutes.
4. Place Dough in a large greased bowl. Cover with plastic wrap and let it rest for an hour.
5. If you divide dough in half it will make 2-14inch pizzas or if divided into 4s it will 4-7inch pizzas.
*Note
You can do this recipe up to 24 hour in advance. You can also throw this dough in the freezer for later use. In either way you will have to take dough out and let it get to room temperature before using.
Building Your Pizza
*Cook on 400 degrees and preheat your pizza stone so pizza will cook thoroughly.
1. Stretch pizza dough. If you cut the dough in half stretch 14 inch if you cut in fours stretch 7 inches. Gently stretch the dough from underneath your knuckles, being careful not to break the dough. You want the dough thinner in the middle and thicker around the edges.
2. Slice veggies and chicken breast. Shred Mozzarella cheese.
3. Spread refried beans over pizza dough, top with Mozzarella add veggies and chicken
4. Cook Pizza on 400 degrees for 8-12 minutes or until golden brown around the edges and on top.
5. Garnish with Cilantro & Sour Cream
