Cinco de Mayo en la casa! (Part 2)

Bang Bang Shrimp Tacos...
Let's "TACO" about these delicious shrimp tacos. This is a 3 part recipe, 1-the shrimp, 2-the slaw, and 3-the sauce. These fiery yet tasty tacos are exactly what you need to celebrate Cinco de Mayo on Taco Tuesday!!
Bang Bang Shrimp
1 c of Buttermilk
3/4 c of AP Flour
1/2 c of Cornstarch
1 Egg
1 tbls of Hot Sauce- I used Sriracha
Kosher Salt & Pepper to taste
1-2lbs of shrimp
1 1/2 c of Panko Breadcrumbs
6 inch tortillas
1 bunch of chopped cilantro
1 c of Vegetable Oil/Deep Fryer- I deep fried my shrimp.(For frying shrimp)
Slaw
2 c of shredded green cabbage
1 c of purple cabbage
1/4 c of Mayonnaise
1/4 c of Sour Cream
1/4 c of chopped cilantro
1 tbls of minced garlic
Juice of 1 lime
Salt & Pepper to taste
Sauce
1/4c of Mayonnaise
2 tbls Sweet chili sauce
1 tbls Honey
2 tsps of Sriracha
Method of Preparation
1.Make slaw. In a bowl combine all ingredients and refrigerate.
2.Make sauce. Combine all ingredients and set aside in a small bowl.
3.Turn fryer to 315-335 degrees or heat oil to 315-335 degrees.
4. Make batter. In a bowl combine the first 6 ingredients and salt and pepper to taste. Pour Panko breadcrumbs in a seperate bowl.
5. Dip peeled & deveined shrimp in buttermilk batter then coat with panko by gently pressing shrimp in the panko.
6.Working in batches, add shrimp to the fryer and fry until golden brown about 2-3 minutes. Transfer to a paper towel lined plate.
Build your tacos. I like to warm my tortilla by laying it in a warm pan. Then remove and add slaw, shrimp, and the sauce.
8. Enjoy!
